Zucchini pancakes with
cucumber salad
Ingredients for zucchini pancakes
3 medium zucchinis
¼ cup of milk
1 cup of plain
flour
2 eggs
salt, pepper
Ingredients for cucumber salad
3 cucumbers
3 Tbsp powdered
sugar
6 Tbsp vinegar
salt
Procedure
Grate the zucchinis
on grater and salt them. Wait a moment while zucchinis releas some water
and squeeze them. Add eggs, flour, milk and pepper and make dough. Fry pancakes
in oil and then let oil drain on a paper towel.
Slice, respectively
grate cucumbers and salt them. Wait a moment while cucumbers releas some
water but don´t squeeze them or decant this water. Let it stand for a while
in a cool place. Mix in a glass vinegar and sugar. If you will have
problems with it, add a little juice from cucumbers. Pour into the
prepared cucumbers and mix it.
